We add a very small amount of sulfites during the fermentation process to protect the freshness and flavor profile of our fruit wines. Although there is some controversy around the presence of sulfites in wine, they actually occur naturally as part of the fermentation process, and additional sulfites have been added to wine for hundreds of years. In fact, 99% of commercial wines contain sulfites.
